One Pot Dinner

Prepare Chicken:
Cut the chicken breasts into bite-sized pieces.
In a bowl, mix the chicken pieces with 1 teaspoon of olive oil, 1 teaspoon each of salt and pepper, 3 cubes of frozen garlic, and 2 cubes each of frozen.

Sear Chicken:
Heat a pan over medium-high heat.
Add the seasoned chicken to the hot pan and cook until it's slightly browned. This should take about 5-7 minutes. Once done, remove the chicken from the pan and set it aside.

Sauté Onions:
In the same pan, add the diced onions. Sauté them for about 5 minutes until they become translucent and fragrant.

Add Vegetables:
To the pan with the onions, add the frozen California mix and broccoli. Season with salt, pepper, paprika, and 2 cubes each of frozen garlic, parsley, and dill. Stir well and let it cook for another 5 minutes.

Combine Ingredients:
Add the washed rice to the pan along with the cooked chicken. Mix everything together until well combined.

Add Liquid and Simmer:
Pour in enough water or chicken stock to cover the mixture in the pan.
Increase the heat to high until it starts to bubble, then reduce the heat to low. Let it simmer for 35-40 minutes or until the rice is fully cooked and softened.

Serve:
Once done, plate the dish and enjoy your delicious chicken and vegetable rice!
