Broccoli Cheddar Cakes

Serves 4

Ingredients

  • 3 cups Chopped Broccoli
  • 2 cups water
  • ½ cup shredded cheddar cheese
  • 1 egg
  • ½ cup all-purpose flour
  • 3 cubes Crushed Garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons vegetable oil

Directions

In a saucepan over medium-high heat add the water and Chopped Broccoli. Allow the broccoli to steam, about 5 minutes.

In a separate mixing bowl, drain the broccoli and allow to cool.

Once cool add cheddar cheese, egg, flour, Crushed Garlic Cubes, salt, and pepper to a bowl and mix until the ingredients are well incorporated.

Place a large pan over medium-high heat and add vegetable oil.

Scoop out the broccoli mixture using a heaping tablespoon and place it in the pan. Let cook on each side for about 2-3 minutes, or until golden brown.

Remove from pan and place on paper towel to absorb excess oil.
