Foil Packets 2 Ways

Ingredients

  • Beef Teriyaki Foil Packets

  • 1 ½ lb boneless skinless chicken thighs cut into small chunks
  • 2 medium carrots
  • cut on a diagonal into large pieces
  • 1 red onion cut into wedges
  • 1 c B’gan Cauliflower Florets
  • ½ tsp B’gan minced garlic
  • 1 ½ tsp turmeric
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • 1 14.5 oz can fire-roasted tomatoes
  • ½ c chicken broth
  • 2 Tbsp olive oil
  • ¼ c dried apricots
  • ¼ c whole green olives
  • ¼ c sliced almonds toasted
  • Couscous for serving
  • Cilantro or parsley for garnish (optional)

Directions

Beef Teriyaki Foil Packets

Cut minute steak, against the grain, into ¼-inch slices.

Add cut vegetables to a large bowl and toss with olive oil, salt, and pepper. Add sliced steak to the bowl and mix well. Pour in the teriyaki sauce mix again.

Tear 4 sheets of heavy-duty foil and divide the mixture among the sheets. Fold the sheet in half and seal the long edges. Flip and seal the long sides while leaving room inside the packet for air to circulate. Cook for 20-25 minutes over medium heat.

Carefully open the packers and sprinkle them with sesame seeds and/or scallions. Serve with rice of your choice.

Cauliflower and Chicken Tagine Foil Packet

Preheat grill to medium heat. Combine chicken, vegetables, garlic, and spices in a bowl and toss to coat. Add in the tomatoes, broth, olive oil, apricot, olives, and almonds.

Tear 4 sheets of heavy-duty foil and divide the mixture among the sheets. Fold the sheet in half and seal the long edges. Flip and seal the long sides while leaving room inside the packet for air to circulate. Grill the packets, flipping once, until the chicken is cooked through, 20-25 minutes. Carefully open each packet and top with couscous and cilantro or parsley.
