Eggplant Cheese Burgers

Ingredients

  • 8 Breaded Eggplant Cutlets
  • 4 hamburger buns
  • 1/2 package Yellow Zucchini
  • 1/2 package Green Zucchini
  • 1 large red onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • Dash of pepper
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/4 cup Parmesan cheese
  • 1 cup shredded cheddar cheese
  • Pinch of salt

Directions

Preheat grill or oven to 450 degrees F. To prepare the grilled vegetables, combine oil and spices in a small bowl until it becomes a paste. Rub the seasoning paste onto the vegetables. Grill on a heated grill (or in a 450 degree F oven on a grill rack) for 10 minutes on each side.

Reduce oven temperature to 375 degrees F. Place Eggplant Cutlets on a baking sheet and bake for 15 minutes, uncovered, until heated through. Meanwhile, prepare the cheese sauce: melt the butter in a small saucepan over medium heat. Stir in the flour to form a thick liquid. Stir in the milk and cook for 4 to 5 minutes until thickened, stirring occasionally. Add in the Parmesan cheese, and stir until melted. Add in the cheddar cheese and salt and stir until melted.

To assemble, place an eggplant cutlet on half a bun, spoon the warm cheese sauce on top of the cutlet, and top with the grilled vegetables.

Tip: To serve with a fleishig meal, omit the cheese sauce.
