Baked Zucchini Breakfast Quiche

Serves 8

Ingredients

  • 1 ready-made pie crust, optional
  • 2 tablespoons olive oil
  • 3 cups Green Zucchini
  • 8 cubes Crushed Garlic
  • 2 cups Chopped Spinach
  • 4 to 6 oz. mozzarella
  • 5 eggs
  • 4 oz crême fraiche or sour cream
  • 8 ounces milk
  • 1 tablespoon goat cheese
  • sliced tomato to garnish
  • ground salt and pepper to taste

Directions

Preheat oven to 400 degrees F.

In a large skillet heat olive oil. Add B'gan zucchini and sauté for 1 minute. Reduce heat, add B'gan Garlic Cubes and cook until almost tender.

In a large mixing bowl beat eggs until frothy.

Add crême fraîche and milk and blend thoroughly.

Pour mixture over ready-made pie crust, optional.

Add goat cheese, salt, and pepper. Mix well and pour over vegetables and cheese and garnish with sliced tomatoes.

Allow to cool for 10 minutes before serving.
