Cheesy Potato Puffs Casserole

Ingredients

  • 1 package Potato Puffs
  • 1/4 cup olive oil
  • 1/8 cup butter
  • 3 1/2 teaspoons flour
  • 1 cup whole milk
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup shredded cheddar cheese
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 4 cubes Crushed Garlic
  • 2 cubes Chopped Basil
  • 2 teaspoons oregano
  • Dried parsley and smoked paprika for garnish

Directions

Preheat oven to 350 degrees F.

Add B'gan Potato Puffs to a sheet tray and brush with olive oil. Bake for 25 minutes, flipping halfway through, until golden crisp.

Meanwhile, make cheese sauce: Melt butter in a medium pot. Whisk in flour and cook for about 1 minute; add a splash of milk, then whisk until smooth. Continue cooking on medium flame, adding milk while whisking slowly and constantly. Add half the shredded cheeses, salt, pepper, Garlic, and Basil Cubes and oregano. Whisk until smooth. Taste and adjust the seasoning as necessary.

When Potato Puffs are done, place one layer of Puffs in a  9 inch round glass Pyrex dish. Pour half of the cheese sauce evenly over the Puffs, then add the second layer of Puffs and pour remaining cheese sauce over it. Bake at 350 degrees F until cheese is melted – it should take approximately 20 minutes. Garnish with parsley and smoked paprika.
